Founded in 2022, Dale Humdinger ACV Gourmet Vinegar has quickly become a local favorite for gourmet food enthusiasts. We proudly offer a carefully blended selection of the finest ingredients and products sourced from around Lane County, Oregon and beyond. You can find our offerings at several local stores. Our unique flavors are sure to please!
We source a lot of our apples from orchards that are no longer in use. We glean them from both big and small trees on farms of all sizes, including those found at the Lane County Farmers Market. We also purchase organic apples to enhance our selection. All the juice gets mixed together, and in about two weeks, our first fermentation produces a delightful Hard Cider with 5 - 6% ABV. After that, we rack it off and add The Mother. We allow it to sit in a warm, dark place for 4 - 5 months before transferring it to another container for longer storage to mellow, which can take up to two years. The result is simply amazing, just like our Humdinger ACV!
Each flavor of Dale Humdinger ACV is a journey, and every one is an experience crafted with great passion and high-quality ingredients. I feel very blessed to be in a land of such cornucopia, where Roots & Fruits, Herbs & Spices come together to make each bottle a delicious dream. It's alive with active bacteria (Acetobacters) that consume the alcohol and transform it into Acetic Acid, the same component found in vinegar, giving it that signature sour taste. We test pH levels and other factors before bottling and labeling each one, ensuring the highest quality. Plus, Dale Humdinger ACV is fantastic for your digestion and offers a variety of other benefits as well.
Fill a glass 3/4 full of ice. Add a jigger of your favorite Dale Humdinger ACV and half a jigger of honey, or two jiggers of Balsamique, Fill with seltzer water, mix well, and enjoy! I really like the Balsamique, Oak Aged, and Vanilla flavors the most.
